Why it’s perfect for spring
This blend is built around ingredients that feel especially right as the weather starts to warm up:
Cucumber + celery → high water content, super refreshing as the weather warms up
Lime → bright, citrusy acidity that feels fresh and seasonal
Parsley → a classic spring herb, often linked with that gentle “reset” feeling
Ginger → adds a bit of warmth, ideal for those not-quite-summer days
Green apple (small amount) → just enough sweetness without making it heavy
Ingredients:
(1–2 servings)
1 celery stick
½ small Granny Smith apple
½ medium cucumber
Juice of ½ lime
10–15g fresh ginger
Small handful of fresh parsley
Method:
Using a juicer: Juice all ingredients, then stir in the freshly squeezed lime juice.
Using a blender:Add all ingredients (including lime juice) with 200–250ml cold water. Blend until smooth, then strain with a fine sieve or cheesecloth bag.
For the ideal serve, pour over ice, or chill in fridge for 15mins, and finish with a slice of cucumber or a sprig of fresh mint for an extra spring lift.
